Shipley Farms
Since its establishment in 1872, Shipley Farms has been dedicated to the art of cattle farming in the beautiful, clover-rich mountain pastures of Vilas, North Carolina. Nestled in the heart of the Appalachian Highlands, Shipley Farms is an integral part of the local community, forging close connections with nearby restaurants and fellow farmers. In 2020 the Shipley family opened a small butchery to serve the surrounding region, filling a desperately needed gap in local animal processing.
A beacon of agricultural tradition, Shipley Farms is steadfastly committed to sustaining and enhancing the quality of regional agriculture. “When you’re trying to grow a farm for many more generations, you have to look at not just sustaining, but improving the quality of land, soil, and forage.”
Against the Grain Farm
Found in the scenic expanse of Zionville, North Carolina, Against the Grain Farm sprawls across 35 acres as a Certified Organic regenerative farm. A beloved fixture at local farmers' markets, this farm holds a special place in the hearts of the community. Owners Andy and Holly cultivate a rich array of vegetables, fragrant herbs, and pasture-raised beef, establishing themselves as stewards of a holistic, biodynamic approach to farming. Their unwavering commitment to the community has turned Against the Grain Farm into a regional agricultural cornerstone, providing not just sustenance but a celebration of quality food that resonates throughout the Appalachian Highlands.
Old Beech Mountain Farm
Old Beech Mountain Farm is a small family farm at the foot of Beech Mountain just outside Boone, NC. Their multigenerational farm works with cattle born and raised in the High Country.
